Fully equipped knish cart, service, stocked and prepared to serve fresh, homemade, vegan potato knishes hot off the press. Think: street-cart energy meets modern catering. I handle the setup, the serving, the flow, you and your guests just show up hungry.
🥣 120 Minute Knish Service
Two full hours of nonstop knish action. Nonstop cocktail knishes, baked fresh, served hot, and handed out as fast as your crowd can eat them. Perfect for parties, pop-ups, offices, and any event that needs a little extra flavor.
🍯 Toppings Bar
A full toppings spread so everyone can build their perfect bite: everything seasoning, mustard, hot honey, za’atar, chili crisp, fried shallots, pickle chips, and more. Your guests customize, I handle the rest.

Shelby Kaufman is the knish-obsessed force behind Kniche, a modern take on the classic deli treat, served with humor, nostalgia, and just the right amount of chutzpah.
The name Kniche (pronounced like “niche”) is a playful nod to the brand’s mission: making a niche knish. A classic comfort food, reimagined with personality, purpose, and a category all its own.
Drawing from a background in hospitality, food creativity, and brand building, Shelby transforms the humble potato knish into a full sensory moment. Every event is a little heimish, a little theatrical, and a lot delicious.
